Lots of veggies in this recipe…and you’d never know it!!
You can use lean ground beef, but I prefer 93% lean ground turkey.
I use fresh tomatoes whenever I can get them from the farmers market, but using good quality crushed tomatoes works in a pinch!
2 Tbsp EVOO
1 small onion, minced
4 cloves garlic…I really like garlic
2 celery stalks, minced
2 medium peeled carrots, minced
1 lb ground turkey
28 oz can crushed tomatoes
Parsley and basil…fresh if I have it otherwise dried works just as good
Salt and pepper
Heat oil over a medium flame, saute onion and garlic until tender, about 6-8 minutes. Add celery and carrots, saute 5 minutes. Increase the heat to med-high, add meat and saute until meat is no longer pink, about 10 minutes. Add tomatoes and spices. Cook over low heat until sauce thickens, about 30 minutes. (This is when I go and do my CDF workout). Serve over whole wheat pasta and top with cheese, if you so desire.
It relatively easy and quick to do even on a week night after you get home from work!!
